Good and Cheap is a fantastic free cookbook of recipes for meal planning on a tight budget. One of the most popular ideas from it is the “half veggie burger.” While the original recipe suggests lentils and bell peppers as the veggie half, author Leanne Brown has tried lots of different meat-and-veg combinations:
“Ground pork and lentils with Moroccan spices. Chorizo and black beans. My current favorite is a half chickpeas/half beef or lamb with lots of herbs. It’s kinda like a falafel-inspired meatball.”
